La Jolla Cove chicken and green bean curry

As the days get longer and the promise of summer is around the corner, I felt like adding an ethnic twist to one of my summer favorites "Greek Green Beans."

Nobody does "Greek Green Beans" like my mother, but if I keep pursuing my skills and developing my recipes I might achieve her perfection one day. With that being said, and in pursuit of the perfect recipe, I decided to add a twist of ethnic flavors (Indian Curry) to my mom's perfect "Greek Green Beans." For the protein, I combined them with organic free range mouthwatering tender chicken breasts.

The results where absolutely phenomenal. The Indian curry flavors were absorbed perfectly into the green beans and their soft and juicy texture went well with the chicken. I made a 5 portion meal and served it to my family. Not only did the kids love the slight bite and delicious soft green beans, but we have leftovers for lunch the following day!
