Bobotie is the official South African National Dish. Thought to have been brought to South Africa by Asian settlers, bobotie is cooked in many homes and restaurants. Minced meat (ground beef to americans) or Beyond Beef (plant based) is simmered with spices, usually curry powder, herbs and dried fruit, then topped with a mixture of egg and milk and baked until set.
Our slow cooker / Insta Pot version is traditional in ingredients, spices and flavors. We have designed this recipe to ensure we keep it clean eating, diabetic, keto/paleo and gluten-free. We have eliminated the "bread" and added sweet potato to ensure we meet those guidelines.
Thaw freezer meal overnight in refrigerator or in the morning in cold water.
Add the contents of freezer bag to crockpot.’
Add water according to the number of servings. 1/4 cup per serving.
Cook on “low” setting for 4 hours in a 6-quart crockpot or 6-8 hours in a 4-quart crockpot.
(make sure your slow cooker is between a quarter to three quarters filled, any less the sauce will burn and any more the meal may not cook in time)
Pressure Cooker: 6 - 8 mins thawed out, 8-10 mins if from frozen
Traditional Option: As an option you can add the "Custard*" topper once the meal is completed in the slow cooker. Simply beat 3 eggs, 1.5 cups of milk, 1/2 tsp of salt, pepper and thyme. Lather "custard" on top of meat and sweet potatoes and bake for 50 mins or until custard is browned.
Serving Suggestion: Top with crushed almonds and serve with a ACU curried rice or Quinoa, green salad and/or steamed broccoli.
